Beyond Soup: 7 Simple Ideas For Butternut Squash

No vegetable says fall like butternut squash.  And there’s nothing more traditional to do with it than make a pot of creamy butternut squash soup. 

And while we love that bright winter staple as much as the next person – maybe even more – there are only so many bowls of it we can eat.  So then what?

This week we’re sharing 7 simple ideas for butternut squash.

1) Make a Stir Fry
Sweet butternut squash contrasts wonderfully with the saltiness of stir-fry sauces.   We like to roast our squash, but you can also slice it thin and cook it in a wok.

2) Contrast with Kale
Butternut squash is a vegetable that can hold its own against assertive kale.  We love to toss hot roasted butternut squash with chopped kale.  The kale wilts a little, and the bitter green with the sweet squash is just the right contrast.  Add some seasonings (more on this below) and serve in a taco, over pasta, or as a hearty salad.

3) Mix with Blue Cheese
The flavors are naturals, and even better with a little sage and pasta.   Best of all with some toasted pecans. Yum!

4) Top a Pizza
It’s a classic recipe we keep coming back to: squash roasted with rosemary and layered over caramelized onions on a flatbread pizza.  With plenty of Asiago on top, it’s a winter staple at Jen’s house.

5) Simmer with Coconut Broth
Squash makes a great hero in a pot Red Thai Curry.  Mix in some broccoli or snow peas, and it’s a simple bowl of goodness.

6) Pair with Vinaigrette
Butternut squash is sweet, so it’s particularly delicious with a salty, vinegary pairing.  Try it over couscous with a lemony vinaigrette and salty feta, like the Citrus & Feta Pearl Couscous in the photo above.

7) Make Pickles
Taking the sweet and sour idea one delicious step further.  Bring sliced squash to a boil in pickling brine, then let cool.  These pickles are wonderful in a salad or mixed up with farro and goat cheese.
