Farro with Wilted Spinach & Lemon-Parmesan Vinaigrette

We get excited about simple stuff in the Meez kitchen.  Like discovering you can toast gnocchi  for a crispy change of pace.  Or adding chocolate sauce to roasted fruit for a not-too-indulgent dessert.  And this week, spreading the word about our favorite grain.

You see, we’re hooked on farro.  It has more protein and fiber than either quinoa or brown rice, and it has a nutty flavor and al dente texture we love.

This week we’re sharing 7 ideas for easy recipes you’ll want to make a staple in your kitchen:

1) Simple Side
Drizzle with olive oil and add some shaved Parmesan.  It’s instant Italy and sooo good.

2) Main Course Salad
A handful of farro adds body and bulk to make any salad a meal.

3) Amped Up Risotto
A nuttier, whole-grain version of the classic.  Just mix in a melty cheese, and you’ve got the creamy wonderfulness of risotto.

4) Soup Star
Mix a cup of cooked farro into a creamy soup to give it body or into a chunky soup to give it an al dente bite.

5) Fried “Rice”
Even better than the traditional steamed rice.  Sauté farro with sesame oil, add some soy sauce and stir fried veggies.  Super simple.  Super delicious.  (And even better with a little red curry mixed in.)

6) Partner for Pesto
Make your favorite pesto pasta dinner with farro instead.  We’re particular fans of basil pesto with broccoli, roasted tomatoes and fresh mozzarella.  Yum!

7) Italian Bowl
