The Chopping Block’s Favorite Black Bean Burgers

We were lucky enough to participate in a cooking class at The Chopping Block a few weeks ago.  They’re experts at teaching all things cooking, and this was a special night to support our partner Common Threads.  When The Chopping Block offered to share the recipe for their special Quinoa and Black Bean Burger recipe, we couldn’t wait to post it to the Meez Kitchen Recipe Blog.

It’s one of their all-time favorite vegetarian recipes and perfect with a salad or grilled veggies.  If you’re looking for a great summer dinner, put this recipe at the top of your list.

 

Ingredients

2 tablespoons extra virgin olive oil
1 onion, medium dice
1/2 cup quinoa
1 cup water
1 cup cooked black beans, drained, rinsed and minced
3/4 cup walnuts, minced
2 cloves garlic, minced
1/2 cup cilantro, minced
1 1/2 tablespoons soy sauce
3/4 teaspoon ground cumin
1/4 teaspoon cayenne
Salt and pepper to taste
1/4 cup all-purpose flour
1 cup panko breadcrumbs
2 eggs, lightly beaten

 

Putting It All Together

Heat a sauté pan over medium heat and add the olive oil. Saute 5 to 6 minutes.

Add the quinoa and water.  Bring to a boil, then lower the heat to a simmer. Cook, covered, 18 to 20 minutes. Remove from the heat and rest for 10 minutes.

In a mixing bowl combine the minced black beans, walnuts, garlic and cilantro. Season with soy sauce, cumin, salt and pepper. Fold in the flour, panko and eggs.

Form rounded 1/2 cups of mixture into six (3 1/2-inch-diameter) patties and set them on a parchment-lined tray. Chill at least 10 minutes. (Patties may be individually wrapped and frozen at this point.)

Heat a griddle over medium heat and brush with grape seed oil. Place the burgers on the hot griddle and cook until browned and crisp on the outside and warm all the way through, about 5 minutes per side.
