6 Desserts In 5 Minutes Or Less

Peach & Orange Blossom TrifleIf you’re like us, dinner needs a little sweet finish to be truly be complete.   And while we love making a decadent cookie or baking a pan of brownies, sometimes we want dessert RIGHT NOW.  And here’s the crazy part — it’s not as big of a challenge as you might think.  This week we’re sharing six of our favorite super speedy, on-the-table-in-5-minutes-or-less desserts.

1) Speedy Trifle
We’re hooked on hands free trifles, like this peach and orange blossom trifle above. And the recipe couldn’t be easier:  Toast pound cake cubes, mix with some peaches and delicious flavored yogurt and enjoy.

2) Cheaters Rice Pudding
Purists like Chef Max will turn up their nose at this shortcut, but if you’re craving rice pudding, look no further than a cup of leftover rice.  Heat it in a saucepan with some milk and a handful of chocolate chips.  Bring to a simmer, then serve with shredded coconut.  Super simple. Super fast. Super tasty.

3) Maple Yogurt With Oatmeal Cookie Crumbles
Dress plain yogurt up with a generous drizzle of real maple syrup, then crumble an oatmeal cookie over top.  (Ones from a box are just fine.)  It’s part parfait, part cookie al la mode and totally delicious.

4) Apples & Chocolate
We think fruit just tastes better with chocolate. Particularly when it’s a rich chocolate sauce that cooks in just 3 minutes.  Heat 1/3 of a cup of chocolate chips with 1/4 cup of milk until it’s melty and thick, about 3 minutes.  Serve over sliced apples.  Heaven.

5) Chocolate Ricotta Bites
Have a little leftover ricotta tucked into your fridge?  Mix it up with some melted chocolate chips to make a creamy filling that’ll remind you of chocolate cheesecake.   (We use ¼ cup of chips to ½ cup ricotta.)  Spread on a graham cracker and, if you want to be extra fancy, add a dollop of raspberry jelly on top.  Yum.

6) Lemon Layer Cake
Our most elegant speedy desert. Serve a slice of pound cake topped with a dollop of lemon yogurt.  Then zest a lemon and mix the zest with a little sugar.  Sprinkle it on top, along with a thin slice of the lemon.  Elegant and delicious.  Brilliant, right?
