Carrot & Parsnip Slaw

We love carrots.  They taste great, of course.  And they’re incredibly good for you.  And we can’t resist that cheerful burst of color they bring to any dinner.  But better than all that, they keep forever, so you can stash a pound or two (or five) in your fridge.

In need of a little inspiration on how to make this veggie into a dinnertime star?  Here are 5 of our favorite no-fuss ways to transform them into something new and delicious.

Lemony Slaw
Toss shredded carrots with a lemon vinaigrette.  We make ours with 2 parts lemon juice, 1 part Dijon mustard, as much lemon zest as we have have on hand.  A few tablespoons of olive oil, plus salt and pepper and it’s ready to go.   (Even better with a combo of carrots and parsnips, as in this photo.)

Super Simple Stir Fry
For the days when you want to eat in 5 minutes, this is for you.  Stir fry the carrots, then toss in sesame oil, soy sauce and a bit of Asian chili sauce.  It’s bare bones and totally delicious.

Sweet & Savory Pasta
Honey-roasted carrots with blue cheese sounds pretty amazing, right?  Toss the carrots with honey and white wine vinegar and roast, then toss with blue cheese and serve over pasta.  It’s heaven.

Pizza Bianca
Top a pizza crust with carrots, feta, thyme or dill and a generous drizzle of olive oil.   Crazy easy.  Crazy good.

Middle Eastern Tacos
Cook the carrots up in any way you like best, then toss  them with tahini, lemon juice and olive oil.  Add in some chickpeas and a tortilla, and you’ve got tacos.  Have some almonds or pistachios?  They’re great on this.
