Toasted Gnocchi with Mint Basil Pesto

We’re hooked on mint.  It adds a freshness that makes even the most familiar dishes exciting.  So when we got the idea to add mint to a traditional pesto, we knew it was a winner.  This week we’re sharing our favorite mint basil pesto recipe along with a few ideas on how else to cook it up!

Mint Basil Pesto

5 Tbsp fresh basil
4 Tbsp fresh mint
1 clove garlic
1 oz white wine
1.5 tsp brown sugar
3 Tbsp olive oil

Pulse in a food processor until smooth, then add salt to taste.

 

5 Ways to Cook It up

1. With Gnocchi
The way members fell in love with this recipe.  Toss with roasted butternut squash, toasted coconut and crispy gnocchi.

2. On Bruschetta
Classic and delicious.  Spread over pieces of toasted bread.  Great as an appetizer or as a side with soup.

3. Over Roasted Vegetables
If there’s one way to make roasted vegetables extra delicious, it’s to top them with a tasty pesto.  Even better is to add a sprinkle of toasted coconut.  It really pairs perfectly with this pesto.

4. In a Baked Sweet Potato
A baked sweet potato makes a tasty dinner when stuffed with the right flavors.  Mash this pesto into the potato and top with feta for a real treat.

5. Drizzled in Soup
Have a mild-mannered soup that needs a little pepping up? (Particularly a can of the store-bough stuff?)  Drizzle this on top with a dollop of sour creme or creme fresh.  You’ve just a made simple meal really special. There’s no need to tell anyone the soup can from the cabinet!
