It’s that time of year when zucchini is everywhere.  At the farmer’s market.  In your garden.  In your CSA box.  On your front porch left by a generous neighbor.  It’s a delicious vegetable that’s suddenly abundant, and it can sometimes be hard to think of new ways to cook it up.   This week we’re sharing 9 of our favorite ideas.

1) Perfect Tacos
There’s nothing simpler, or more delicious.  Just sauté with some onions and your favorite sauce and enjoy in a taco.  It’s as tasty with traditional red and green salsas as it is with less traditional toppings like sriracha aioli and basil pesto.

2) Tropical Side
Mango and zucchini make a winning tropical combination.  Sauté zucchini and toss with small bites of mango, cilantro and lime juice.  It’s a tropical side dish the whole family will love.  Don’t have mango?  Pineapple works great, too.

3) Farro Salad
Zucchini brings great texture and contrast to grain salads.  We love to sauté it and  serve with farro and a tasty vinaigrette.  (Like this recipe here.)

4) Savory Fritters
A delicious veggie sneak.  Serve topped with mint yogurt, and you’ve got a great appetizer or main course.

5) Ribbon Salad
Zucchini is delicious raw, as well as cooked.  Cut it into ribbons and toss with chickpeas, feta and your favorite vinaigrette for a fresh salad.

6) Zucchini Pesto
Sauté grated zucchini with lots of olive oil and garlic, then spread on crostini, toss with pasta, or anything else you’d pair with traditional pesto.

7) Speedy Brunch
Cook zucchini with lots of parsley and serve with a poached egg on top.  Even better with a lemon aioli or lime yogurt topper.

8) Zucchini Crudo
Taking a page from a classic Italian crudo (raw) appetizer.  Drizzle thin zucchini disks with lots of olive oil, lemon juice, salt and pepper, then chill for 45 minutes.  Serve topped with red onions, feta and fresh herbs for a delicious change of pace.

9) Fried Zucchini
One of our favorites, and so simple you’ll find yourself making them again and again.  The trick is to use plenty of hot oil and sprinkle the veggies with salt and pepper when they come out of the pan.  Intrigued?  We’re hooked on Pasta with Fried Zucchini. Yum!
