10 Tasty Tricks for Corn

We lSpinach Pancakesove fresh corn, but even the most delicious corn on the cob can get a little tired after a while.  Here are 10 tricks from the Meez Kitchen for making corn a dinnertime star. 

All are simple, fresh and delicious, just like cooking with Meez.  Start with great summer corn and get ready to eat dinner in a flash.

1) Raw Salad — Toss raw corn with feta, walnuts and a generous squeeze of lime.  Delicious!

2) Caprese Salad — Is there anything more summery than the classic Italian Balsamic-Tomato-Basil trio?  Mix it up with corn and make it a quartet.

3) Pasta Partner – Did we mention how great corn and basil are?  Toss the two with pasta and olive oil to make them even more magical.

4) Savory Corn Pancakes — Use your favorite pancake recipe, but skip the flour and mix in a cup of corn, jalapeno and some feta or cheddar.  (Have cornmeal?  Replace some of the flour with that, as well.  It’s even better.)

5) Minted Quinoa Salad — Mint gives corn a refreshing twist that we love.  Mix with the corn, quinoa, lemon juice and honey for a fresh salad.

6) Speedy Gazpacho — Zip corn, diced tomatoes, lime juice, avacado and cilantro in a food processor or blender.  Add a little water for a guacamole soup!

7) Summer Pizza — Corn is delicious on pizza.  Great with basil pesto, artichoke hearts and sun-dried tomatoes.

8) Chinese Stir Fry — Think past those baby corn ears.  Corn kernels are great stir fried and tossed with sesame oil, ginger, chili sauce and snow peas.

9) Basil Corn Relish — Yep, we really do love basil and corn together!  Mix the two with red onion, cider vinegar and you’ve got the perfect topper for the spinach pancakes in the photo above.

10) Toasted Corn & Zucchini Tacos — Corn gets even better when it’s toasted and crispy.  Pair with mango and lime, and you’ve got something really special.
