9 Fresh Ideas for Edamame

Linguini with Cilantro-Edamame PestoWe’ll admit it.  We’re hooked on edamame.  It’s ready in a heartbeat, packed with more protein and vitamins than we know what to do with, and sits patiently in the freezer until we’re ready to cook it up.

This lovable legume is a natural in Asian recipes, but it doesn’t end there.  This creamy, sweet bean is recipes ranging from classic Italian pasta recipes to French inspired casseroles.

This week we’re sharing 9 fresh ideas for this power veggie:

1) Edamame Pesto — The magic beans mix up beautifully with basil, cilantro, lemon, Parmesan and olive oil for a nut-free pesto.  Perfect with pasta, as in the recipe above.

2) Cheesy Toasted Edamame — Just like the toasted version above, but with Parmesan baked on for good measure. Addiction alert — it’s impossible to nibble just a few of these.

3) Toasted Edamame — Crispy-on-the-outside, tender-on-the-inside.  Roasted edamame are truly delicious.  Just drizzle with olive oil, salt and pepper and roast until golden brown in places.

4) Edamame Guacamole — Add edamame to your mashed up avocado to up the protein and cut the fat of our favorite snack.

5) Edamame Mashed Potatoes — Yep, you read that right.  Mash up edamame with boiled potatoes for a protein-packed side,.  We like to add curry powder and a little coconut milk for an Indian flair.

6) Edamame Au Gratin — Layer tomato sauce, edamame, mozzarella cheese, breadcrumbs and Parmesan in a casserole dish, then bake until bubbly and golden brown.  Perfect with crusty bread.

7) Green Hummus — Use edamame and cilantro in place of chickpeas and parsley and you’ve got a fresh take on the Middle Eastern standby.

8) Edamame Cakes — Mash them up with a little onion, garlic, egg, flour and milk so they’re the consistency of thick pancake batter, then cook up on your griddle for a savory treat.

9) Edamame Tacos — Would any Meez list be complete without a taco?  We make our favorite edamame version with lemon, mint, almonds and feta.
