One Jar of Curry Paste, Eight Fresh Ideas

Miso-Glazed Edamame with Udon NoodlesEver buy a jar of curry paste, use one tablespoon for a Thai curry and let the rest of the jar linger in your fridge because you didn’t know what else to make with it?   This magical ingredient adds a delicious flavor to almost anything it touches, and this week we’re sharing some of our favorite ideas for putting it to use again and again.

1) Miso & Curry Glazed Vegetables
One of our favorites.  Combine equal parts miso and curry paste with a splash of soy sauce and a few tablespoons of olive oil, then toss with your favorite veggies to make a delicious side dish, or pair with udon noodles for a tasty entrée, as we did above.

2) Thai Soup
Wonderfully fresh and wonderfully simple.  Sauté onions and add a little curry paste, then coconut milk and your favorite veggies. Have some fresh basil, lime, lemongrass and ginger?  They make it even better.

3) Curry Fried Rice
Add a tablespoon of curry paste to sautéed veggies.  Mix in leftover rice and you have a delicious dinner.

4) Thai Curry Aioli
Hands down, our new favorite condiment.  Mix curry paste with mayonnaise and a little lemon juice.  It’s perfect on sandwiches, over sautéed veggies or as a dip for carrots and celery.   Make plenty – you’ll want to use it on everything.

5) Curry Egg Scramble
Curry paste gives eggs a zip we love.  Heat curry paste and butter, then scramble an egg.  Yum!

6) Frittata
A dinner version of #5.  Add a spoonful of curry paste to your next frittata and get ready to swoon.

7) Pizza
An Asian flair for an Italian classic.  Mix equal parts curry paste and peanut butter (yes, peanut butter!) with a splash of coconut milk and soy sauce.  Mix well and add some sriacha for a little kick.  Spread over your dough instead of a traditional sauce and top with veggies.  Bake and enjoy!

8) Red Curry Hummus
A simple spark for an old favorite.  Mix a little curry paste into plain hummus, drizzle fresh olive oil over top and you’ll have a new favorite dip.
